The genealogy on your Mother's Chwedchuk side is complicated because the territory that is involved is Belarus, which over time was controlled, at one time or another, by Belorussians, Ukrainians, Russians, and Poles. When Russia was in control, it actively conducted a policy of Russification, which included restricting and prohibiting the language of Ukraine.

Thus: At any rate, your Great, Great Grandfather Chwedchuk, Your Great Grand Father, and your Grand Father "Tony" was born when the territory belonged to Belarus. When your Great, Great Grandfather Chwedchuk was born in Belarus, his town was located just across the border from Ukraine.

Now then, when your mother and brother Leonard were born, the territory was then controlled by Poland. To complicate matters even more, Leonard described "Tony" , who was born in Belarus, as being Ukrainian

Now as for Nanny, your Grandmother. This is easy. She was Russian, and, though little is known of this side, her ancestors before her were no doubt all Russian too.

Now, as for your other grandmother - Mary - the wife of Joseph (your Dad's mother), she was Irish. Both her father (Morrissey) and Mother (Ryan) were born in Ireland.

Note:

Finally, re your Dad, Richard Rimmer. His blood line is both English and Irish, and he associated far more with his Catholic, Irish mother than with his Protestant, English father. He was also a practising Catholic (even apparently an alter boy) - which his Irish mother (a practising Catholic) would have insisted on in those days- as late as 1942 when he joined the Canadian army and attested to that fact.
     
And, so that would explain why he would have said that he was Irish as you have said.
